Recording recipes of rural Bosnia and Herzegovina (august 2013)

Between the 6th and the 21st of August 2013, a famous author and cook– Ms Susan Hermann Loomis – visited different parts of rural Bosnia and Herzegovina for Alterural.



Her mission aimed at meeting many families to discover and record traditional recipes of Bosnian rural gastronomy. She visited small villages nearby Sarajevo, Skakavac waterfall, as well as the authentic village Umoljani on Bjelašnica, Prokoško mountain huts and Vareš.



Susan is American but lives in France for more than 30 years and organizes cooking classes for tourists in a small town in Normandy. In Strića village on Zvijezda mountain, she conducted a workshop with “Strica Zaruđe”, a very active local association on “how to organize cooking activities with the guests as a tourist product”. More than 20 women attended her class on the 18th of August. Among collected recipes, there are typical meals from Vareš and from Fojnica surroundings. “People are very friendly here and you can easily feel they all love their country. Their food taste the same” – said Susan. Women who live there cooked everything: pie, pura (Bosnian palenta), baklava and sweets, domestic syrups and so on. In the future, her inventory can be of a great value for preserving traditional Bosnian cooking.
